Carrots are good for your eyes right soooo do carrots affect rod cells and cone cells? If so, how?

It has something to do with vitamin A and its derivatives. Not related to syllabus but carrots are historically popular for eyesight and recommended. In modern time it became obvious that retinoic acids are necessary for early development of embryo, so pregnant women use vitamin A under supervision of doctors.

-when light hits a rod cell it causes the rhodopsin to split into opsin and retinal. soo how does opsin and retinal act as transmembrane structures.

Rod cells are photon-receptors are specialised for low light conditions, they are unable to detect different colours. The outer segment is responsible for absorption of light. Rhodopsin is the visual pigments of rod cells.
